- 番茄红素 (Lycopene):番茄红素在番茄和粉红葡萄柚里的含量很高。由于它有很高的抗氧化剂活性,因此有助于预防癌症的发生。一项观察性研究发现,那些饮食中摄入大量番茄的美国老年人,他们的癌症发生率降低了50%。其它研究也显示富含番茄红素的食物有助于预防肺癌、结肠癌、乳腺癌等多种癌症。
- 维生素C:几项观察性研究已经发现高维生素C摄入饮食和低胃癌发生率之间的密切联系。维生素C能预防致癌物如比较有名的N-亚硝基化合物在胃里的形成。观察性研究还发现高维生素C饮食可能可以降低结肠癌、食道癌、喉癌、膀胱癌、宫颈癌、乳腺癌及肺癌等癌症的风险。
- 绿茶:动物研究发现绿茶能预防胃癌、肺癌、食道癌、十二指肠癌、胰腺癌、肝癌、乳腺癌、结肠癌等。然而,人体的观察性研究结果并不一致。有些研究发现其有预防作用,而有些未发现。
